We had a well earned long lie in this
morning after a busy week of early starts, after freshening up Brenda was on
the breakfast rota to I had her famous ‘ Campo’ Poached Eggs on Toast – Scrambled
for her, with Toast Fingers, with mugs of strong/hot Tea!
The sun had broken through earlier and sky
has cleared as the breeze has dropped overnight, by lunchtime it’s forecast to
be 21 degs+ - tomorrow is going to be a little cooler as the breeze picks up
again, next week is now looking settled & dry, with patchy clouds at times,
but mainly sunny with sunshine, hovering in the mid ‘ teens’ – by next weekend
rising again to 20 degs+ - still over night on the 10/11 degs mark, just about
right for the time of the year, watch this space.
On the sports front this weekend; over in
the UK on Sunday it’s the ‘ EFL Cup Final’ as Chelsea play Manchester City at
Wembley, meanwhile up at Old Trafford Manchester Utd welcome Liverpool, on
Monday Everton go down to Cardiff. Over here in ‘ La Liga ‘ Barcelona are up
here to play Sevilla and Real Madrid travel to Levante.
Later this afternoon in Cardiff, at the ‘
Principality Stadium’ it’s the ‘ Guinness Six Nations Rugby Union’ as Wales
welcome England in the ‘Game of the Day’ – France play Scotland and tomorrow
Italy welcome Ireland.
The ‘ National Hunt Racing’ today is from Kempton
Park & Chepstow.
For our supper this evening Brenda has
requested one of her old favourites, for a change, a ‘ Confit of Duck Leg ‘ – finished
in a hot oven ‘ Crisp’ I’m having a ‘Grilled Angus Rib Eye Steak’ garnished
with seared Button Mushrooms, with Whole ‘ French’ Green Beans, Wilted Baby
Spinach and twice-cooked ‘ Frits’
On Sunday, again, for a change at Brenda’s
request, I’m going to make another old classic, my version/recipe of “ Poulet
En Cocotte Bonne Femme “ – using just the Chicken Breast, they are ‘ Coloured’
in foaming Butter, then ‘ Pot Roasted’ in a rich White Wine Salsa with Baby
Shallots & Mushrooms & Smoked Bacon Lardons, in a strong ‘ Chicken
& Vegetable Stock’ – served with another old classic, ‘ Pommes Parisienne’ –
using a ‘ Melon Baller’ to cut out the balls of potato, they are drained-off
and then tossed in clarified Butter & Goose Fat – until cooked and tender
all the way through & golden, seasoned to taste & sprinkled with
Chopped Parsley!
After all the sport this
afternoon, we will later settle down to find a good film to watch, last night
we caught another episode of the excellent ‘ Vera’ as she chased a double
murderer.
