A NOW CLEARING ' CRISP' & SUNNY MANILVA ON WEDNESDAY.


WEDNESDAY 6th/ MARCH 2019.     “ BRITISH PIE WEEK “


































I was up early again this morning and after a quick freshen up I shot off across to the ‘ Estepona Hospital ‘ for my next appointment with the ‘ Physiotherapy Department’ for more treatment on my problem left-hand, I have two more visits on Thursday & Friday, then Encarni has arranged an appointment with the ‘Consultant’ -on Monday lunchtime, back at the Hospital, next week, for a review/check up on my progress.


The forecast ‘ Rain’ has not yet appeared, it’s very grey and overcast with lots of black clouds on the horizon, there is a light breeze, making it ‘Fresh’ – so it’s still possible that the ‘ wet-stuff’ will hit us later, tomorrow and over the weekend is now looking dry, going warmer, with patchy clouds at times, up to 20/21 degs by Sunday, next week is going to be even better, with lots of sunshine hovering, on the 24 degs mark next Monday, the rest of the week leading up to the ‘Carnival’ next weekend here in sunny Manilva, is going to stay settled, a little cooler at times, but still back to normal for the time of the year, watch this space. When I returned I got this evenings supper on the go; “ Chicken & Mushroom Tarragon Pie “ – I sweat-off all the small diced ( Macedoine ) of Onions, Shallots & Garlic, Carrots, Turnips, Leeks, Celery, Red, Green & Orange Peppers, Baby Mushrooms and Smoked Bacon Sippets,  in a ‘ White Wine’ reduction, with Chopped Parsley and lots of ‘Tarragon’ Herbs, along with a dash of ‘Lea & Perrins & Tabasco’ – at the same time I ‘ brown-off the seasoned and dusted in flour, diced Chicken Breast, Leg & Thigh, before adding it to the pot with a rich ‘Chicken & Vegetable’ Stock, then left to ‘ cook-off ‘ under the eagle eye of the ‘Second Chef’- who adjusts the seasoning & consistency, it’s then emptied into the large buttered casserole dish and left to cool down, this evening I will top it with the ‘ Short Crust Pastry’ – brushed with beaten  ‘Campo’ Egg Yolk and placed in a medium hot over to bake! It will be served with finely sliced Green Beans and Baby New Potatoes, in their skins!   The ‘Aromas’ are wafting around the house!!

















Yesterday evening after supper we settled down to watch the next episode of the excellent “ Shetland “ as ‘Detective Perez’ and  ‘ Tosh’ his assistant started to crack the case, in a gripping story line, with more threats to his daughter, a ‘Fire-Bomb’ on a witness’s house, a nasty ‘Lady’ villain finally tracked down & arrested, another young female victim dying, as the kidnappers got desperate, meanwhile in their personal lives, ‘Perez’ is getting close to a friend’s wife and ‘Tosh’ stayed the night at her new boyfriends! Watch this space.
