A VERY CRISP AND SUNNY MANILVA ON SUNDAY;

SUNDAY 15th/ FEBRUARY 2015.







Just a little lie in this morning before we go the roast on the go, we had our usual breakfast and then started; the ‘Loin of Pork’ has gone onto the oven, seasoned with Salt and Lemon juice, on a bed of ‘Trivets’ - all the ends of the vegetables along with anything else I can find, lots of seasoning and some vegetable oil. The stuffing today is made with Mixed Herbs, Sausage Meat and Breadcrumbs.

I will make the finger licking pan-gravy as the roast come out of the oven by taking the ‘Trivets’ out and deglazing the tray with flour and vegetable stock, adjusting the seasoning and consistency and then finishing it with a touch of ‘Cross & Blackwell Gravy Browning’ ( thanks Josie!) 

From the vegetable department the chef is preparing Broccoli & Cauliflower Florets in a three Cheese sauce, Crushed Carrots & Baby Turnips, Baby Brussels Sprouts with diced Smoked Bacon bits,Garden Peas and then this evening for a change I’m going to prepare the classic ‘Fondant Potatoes’ – barrel shaped potatoes cooked in a rich Chicken & Vegetable stock until the stock has nearly been soaked up, then they are glazed with knobs of butter! Today the sun is out and the sky is blue, there is a stiff breeze, so it crisp and sunny Manilva ,back to normal, then for the start of the week its staying the same but getting a little warmer and the breeze dropping.

We are going to shower and freshen our selves up before going for a walk with ‘Chispa’ at lunchtime. ‘Scruffy’ is coming for a few hours later this afternoon.

Last night after our ‘Valentines’ special meal, the ‘Tournedos Rossini’ were just perfect, they brought back lots of memories of the classic dish which we have served all our working lives, we started with ‘Kir Royal’ with a Strawberry garnish and finished the meal with mini Chocolate Éclairs with more Strawberries!

On the sports front England beat Italy 47-17 but did not play very well and made lots of mistakes, Liverpool won 1-2 in the ‘FA Cup’ and Real Madrid  won 2-0 by were not impressive!

After supper we found a rather gruesome movie to watch “ Escape Plan” from 2013 with Sylvester Stallone as a specialist high security jail breaker who ends up being tricked into one that he can’t get out off, or can he? Arnold Schwarzenegger plays himself and Vinnie Jones is tough nut case warder! Sam Neill,Jim Caviezel and Curtis ‘50 Cent’ Jackson are also mixed up in the mayhem!!
