SUNNY AND WARM MANILVA ON WEDNESDAY;

WEDNESDAY 16th/ OCTOBER 2013.

We have yet another glorious day in sunny Manilva; we are rather lucky as in Northern Spain and along the Atlantic coast above Portugal its wet and windy, in the mountains all over the country they have fresh snow!

After our breakfast I set too and made the ‘Chicken Tarragon and Mushroom Pie’ – with diced Onion, Leeks, Celery Carrots, Green Beans, Red, Yellow and Green Peppers and Button Mushrooms, the diced Chicken Breast is tossed in seasoned flour and lightly cooked in Butter then added to the pan after the vegetables have been sweated in White wine with lots of Tarragon and my secret ingredients, I add a good Chicken and vegetable stock and leave to simmer, when its just ready I add a little Béchamel sauce and season to taste and adjust the consistency, Brenda always has a taste at this stage and suggests if needed more Salt or Pepper! I’ve made a small pie for Mano, this evening I cover the pie with Pastry and then bake in the oven not forgetting to brush the top with Egg wash, twice!

See the pictures above of the before and after of the Pie !

This week we are having a nice quiet time at home as we don’t have any appointments or plans; we are back into our routine in sunny Manilva ! After finishening this blog we are going to pop along to the Opticians in Calle Mar to pick up Brenda’s new glasses, watch out for the picture later! As you can see we have just come back from a 'Road Test' with the new glasses.

This morning I had to ring the ‘International Pensions Department’ as my pension did not arrive in our bank yesterday, it turns out they bank with the American ‘Citi Bank’?! and because it was a bank holiday over in the USA and also with their current government financial problems over there my pension was delayed, its just arrived in the account a few minutes ago!!

Early this evening we had a phone call from Terry in France they live in a house in the county about 45mins from St.Malo,a dear customer and friend from back in the days of the 'Hotel Seventy Degrees' We had a long catch up chat and that's why you can see the old picture of the 'Dulas Arms' - his daughter live four doors down in one of the old cottages! He has been married to Alma for 54 years since they were childhood sweethearts !! So we have still a bit to go !! So nice to speak to Terry after all those years,we wish him and Alma all the very best and will keep in touch with them ! Promise !!

Thought for the Day; See above.
