No lie in this morning as we had to get
today’s supper on the go, after a quick freshen up we grabbed our toast &
tea before preparing this evenings ‘Roast’
& Vegetables!
After chopping all the ends of the
vegetables, for the ‘ trivets’ in the roasting tray ( Broccoli, Carrots, Onion
& Garlic, Leeks, Celery & Swiss Chard etc) – with a dash of ‘Lea &
Perrins and Tabasco’ - Tomato Frito & Mixed Herbs, and Vegetable Oil, I seasoned the ‘ Loin of Spanish Pork’ with
Sea Salt & Lemon juice, to roast in a hot oven, basting at times, then left
to rest.
Meanwhile the ‘Second/Vegetable Chef’ was
preparing the ‘ Broccoli & Cauliflower Florets’ in a three Cheese sauce,
Crushed Baby Carrots & Turnips, Braised Cabbage with Acelgas, Roast Onion
and Garden Peas, not forgetting the par-boiled ‘Half-Sliced’ potatoes, after
shaking, tossed in the Roast ‘Pork’ Fat/Juices, (sadly still no Goose Fat) - to
roast in a very hot oven this evening, finally I made my famous ‘Finger-Licking’
Pan Gravy – de-glazing the roasting tray, after making a flour roux, with a
Rich ‘Meat & Vegetable’ stock and Vegetable cooking water, seasoning to
taste, adding a dash of ‘ Crosse & Blackwell Gravy Browning’ – then left to
cook-off, under the able ‘eye’ of the ‘ Second Chef’!
This morning has started bright, dry & ‘
fresh’ as there is a stiff breeze, the clouds are clearing and the blue sky is appearing,
with a little sunshine, by lunchtime it due to reach 20 degs+ - overnight down
to 12 degs+ - next week is now looking a lot more settled, with warm sunshine
on most days, a few patchy clouds with mainly light breezes, hovering in the
low 20s, by next weekend back up to 23 degs+ - overnight only down to 14/15
degs+ - just the small chance of the ‘ Wet-Stuff’ – the following week staying
the same, watch this space.
