After a nice lie in this morning we freshened
up and had our regular light breakfast of fresh fruit ( sliced Banana ) toast
and tea, to set us up and get going into ‘ Week 11 ‘ of ‘ LOCKDOWN ’ –here in
sunny Manilva, down on the ‘ Costa Del Sol’
We have another glorious start to the day,
the sun broke through earlier and the sky is clear, cloudless and bright blue,
there is a light breeze, making it ‘ Fresh’ at the same time as well as being
hot & sunny, by lunchtime it’s forecast to reach 25 degs+ - overnight only
down to 18 degs+ - next week is going to be very settled, with lots of sunshine,
with just a few patchy clouds at times, the breeze will keep it a little
cooler, hovering in the mid 20s, all week, the following week is going to be a
lot warmer, for the start of June, going up to the high 20s, watch this space.
Meanwhile over in Everett, Ontario, Canada,
Sandra & Bill have managed to go up to ‘ Hope Bay’ – hemmed in by the Niagara
Escarpment on both sides of the bay and sandy beach, where they have their
large ‘Trailer’ parked up, for a relaxing short weekend break.

“ CORANAVIRUS UPDATE – COVID 19 PANDEMIC “
Yesterday afternoon up in Madrid, the Prime
Minister, Pedro Sanchez, during a televised address, announced that Spain’s
top-flight soccer league ‘La Liga’ will restart games next month, at the same
time he said that the tourist sector should start to prepare for the upcoming
summer season, from July, as foreign tourists will be able to arrive here, all
this will happen as the various ‘ Phases’ are passed! Watch this space.
For our supper this evening we are having ‘Pan-Seared
Medallions of Pork Fillet’ garnished with seared Asparagus Spears & Button
Mushrooms, accompanied with a sauceboat of a rich & creamy ‘ Green
Peppercorn ‘ salsa, served with whole Baby ‘ French’ Green Beans, Glazed Carrot
Batons and Florets of Broccoli, with some small Baby New Potatoes, boiled in
their skins!
Bringing back happy memories of serving ‘
Jersey Royals’ when is season ( flown in especially) & local ‘Cheshire New Potatoes’ from Little
Budworth! ( picked the same day!) – served from a special Copper ‘Bain Marie’ on
the ‘ Flambe ‘ lamp, on the ' Gueridon' service trolley's, at the side of the tables, with knobs of cold Salted
Butter & chopped Parsley, in the ‘
Horizon Suite Restaurant ‘ of the famous “ Hotel Seventy Degrees’ - above
Colwyn Bay, in North Wales, back in the late 70s/early 80s!
