Up as
normal this morning as we had to catch our gas bottle delivery man first thing;
the workers are back on the development and have commenced on some wall brick
work, yesterday they also dropped off some tall steel fabrications – watch this
space.
We had our
usual breakfast of Weetibix, toast, tea & fresh Orange juice before getting
the day on the go; the sun was out early this morning and the sky is blue,
there is a little breeze in sunny Manilva which will make it very pleasant
later at the temperatures go up, all over Spain today its going to be he
hottest day on record in May with in some inland places especially down here in
Andalusia reaching 42/44degs!
Brenda is
pottering about finding jobs to do and after breakfast I made tonight’s supper
a “Chicken, Mushroom Tarragon Casserole” I sweat off all the ingredients, that
I have finely diced, in White Wine( thanks Brenda) & Tarragon along with my
secret ingredients using Onions, Garlic, Carrots, Swede, Celery, Leeks, Red
& Green Peppers and Baby Mushrooms, the Breast of Chicken is cubed and
tossed in seasoned flour before lightly stirring it in Vegetable oil; then its
added to the rest of the ingredients along with a strong Chicken &
Vegetable stock and left to cook out.
I will
adjust the seasoning and consistency later, meanwhile, the ‘Vegetable/Assistant
Chef’ – Brenda, is preparing whole Baby Carrots, Garden Peas & Saffron New
Potatoes to accompany the casserole.
‘Chispa’
came crashing early this morning and is playing around the house, we will go
for a nice walk a little later and will perhaps have a cool drink! It’s about
now that ‘Lumy’ up in Bar Rojas starts making her special “ Gazpacho” recipe
which she serves in tall glasses ‘Spanish Style’ as a drink!
Last night
after supper we watched the second-leg semi-final of the ‘UEFA Champions
League’ as Barcelona beat Bayern Munich 3-5 on aggregate to go through to the
final in Berlin, this evening Real Madrid welcome Juventus in the second
semi-final.

We have
settled down into the routine of going up to the roof terrace in the late
afternoon after the sun moves around to read, listen to some music and then
have our ‘Happy Hour’ cocktails – what a life – it’s hard but somebody has to
do it!!
