Just a little lie in this morning as we
have a busy ‘ Prep-Day ‘ ahead, after freshening, we took ‘ Chico’ & Lolo’
out for their first walk of the day, when we returned we grabbed a quick toast
and tea before getting this evenings ‘ Welsh Banquet’ on the go!
This morning the breeze has dropped a bit
and the sky is clearing, with a few patchy clouds still around in the blue sky,
by lunchtime it’s due to reach 19/20 degs+ - overnight down to 12 degs. – with the
chance of the ‘ Wet-Stuff’ hanging in the air, next week it’s starting the same,
but by Wednesday it will be back to warm & sunny, reaching 22 degs+ - the rest
of the week and over next weekend staying dry & settled, hovering in the
high ‘ teens’ – with warm sunshine, watch this space.
I first got the ‘Halal Leg of Lamb ‘
prepared, seasoned with Sea Salt & Black Pepper, studded with cloves of
Garlic & Rosemary, then placed on a bed of Mixed Trivets, with Vegetable
Oil, to go in a very hot oven to roast,
basting every half hour, checked with skewer, the old way, by placing it on the
tip of my lip!
I then made the large dish of my classic
and now very famous ‘ Boulangere’ Potatoes – with the help of the ‘ Second Chef’-
who peels the potatoes, which I then hand-cut/slice ( three different thickness’s)
before layering ( overlapping top & sides) in the buttered dish with sliced Onions,
seasoning each layer as they are pressed down, before adding a rich ‘ Chicken
& Meat Stock’ – sealed with Tin-Foil – ready to go into a very hot oven
this evening, after an hour the Tin-Foil is taken off and the top of the
potatoes are studded with knobs of Butter, and the dish placed back in the over
to ‘ crisp-off’!
We are also having, as a garnish,
hand-turned ‘ Goose Fat Roast Potatoes ‘ – served with a classic ‘ Mint’ sauce
& ‘Mint Jelly ‘ – meanwhile the ‘ Second Chef’ was preparing Broccoli &
Cauliflower Florets in a three Cheese sauce, Crushed Baby Carrots &
Turnips, Creamed Baby Leeks, Braised Onion & Garden Peas. To start we are having a selection of light ‘
Tapas’ – with a nice bottle of chilled ‘ Moet & Chandon’ ( thanks Leah!)
For our dessert I’m cooking to order – ‘A La Carte ‘ style, my famous ‘ Crepes
a la Mode ‘ – very thin pancakes, tossed in sugar with a squeeze of Lemon Juice
and folded into triangles, served with fresh, local Strawberries and Vanilla
Ice Cream!

Just a quick update on one football result;
sadly it’s the shock result in the ‘ Premiere League ‘ as lowly Watford beat
Liverpool 3-0 – after going 44 games unbeaten! The whole Liverpool team were
outplayed, the better side won!!
